Industrial symbiosis for valorising whey and banana wastes and by-products for the production of novel foods

EPTES is member of the SYBAWHEY consortium which aims to build a trans-national partnership between Europe and Africa for promoting area-wide sustainable supply network for the generation of innovations in the direction of food waste management and valorization. The main focus will be on exchange of material and non-material based resources via international as well as intersectoral mobility between Africa and Europe. Methodologically, it draws on a case study of high volumes of underused by-products and wastes from banana production in Uganda and the environmentally toxic cheese whey produced by Cyprus dairies. Indeed, Banana flavour is one of the most preferred flavours in dairy products. Therefore, one of the approaches of the project is the development of innovative technologies for aroma extraction from banana pulp and peel to be used in dairy products. Eptes will be working in collaboration with the Aristotle University of Thessaloniki (Greece), Cyprus University of Technology, (Cyprus) Lefkonitziatis Dairy Products Ltd (Cyprus), Kyambogo University (Uganda), AfriBanana Products Ltd (Uganda) and University of Birmingham (UK) on the development of selective solutions to generate aroma extract from banana by-product/waste streams (pulp and peel). The SYBAWHEY project if financed by the European Commission and the duration is two year.
