In the GC-O, the Gas Chromatograph is coupled with the Eptes olfactometry system that allows a trained  chemists and flavour panelists to smell and perceive the individual aroma compounds eluted from the chromatographic column. As the separated compounds pass through the GC column, they exit at different times (retention times) and are carried to the olfactory system. Each separated compound reaches the panelist’s nose at specific moments at the Sniffing olfactory port, enabling the correlation of the chromatographic and mass spectrometry data with the perceived odor.
