This module is designed to establish and calibrate a sensory tasting panel for both unflavoured and flavoured snack chips. It also aims to standardize the sensory vocabulary used to describe chip attributes, providing sensory researchers with a consistent and reliable methodology for evaluating product quality.

Sensory evaluation of Chips

The training is based on 2 main modules.

Module 1

The module consists of sessions conducted over multiple days, with the aim of standardizing sensory terminology and calibrating the tasting panel.

1. Sensory Evaluation of Texture
2. Sensory Evaluation of Appearance
3. Assessment of Aroma 1 (Flavours)
4. Assessment of Aroma 2 (tastes, spices, off-flavours/defects)
5. Panel Calibration & Reporting

Module 2

Module 2 aims to equip sensory evaluators with various methodologies for assessing the quality of snack chips.

1. Discrimination Testing (Triangle Test, Duo-Trio Test)
2. Shelf-Life and Stability Testing
3. Descriptive Analysis
4. Consumer Acceptance Testing (Hedonic Scales, Paired Comparison Tests)

This module is intended for sensory researchers, food scientists, product development specialists, QA professionals, production operators, and others from academia or industry who are interested in learning essential methodologies for the sensory evaluation of both unflavoured and flavoured snack chips.
